Plantain Flatbread Hey Everybody! Many of you have heard me prattle on about food and recipes just about every time you are in. I KNOW many of you heard about the plantain flatbread that I am claiming is a complete game-changer in the no-grain diet world. Working with a piece of produce is a unique and unusual way to make a piece of ‘bread’. I was pretty skeptical at first, and amazed when it worked so well. I do want to point out that the greener the plantain, the better. Try this recipe with a brownish-yellow one and you will just have sweet mush. I also want to note that each time I have made this, it has turned out a little different in color, texture, etc. That is the nature of the game and I expect has a lot to do with the ripeness of the banana. I also found that trying to double the batch and make 2 in the oven at once didn’t work so well because there was too much moisture in the oven.
